Did you know that the state of Michigan produces more than 300 commodities, making it the second most diverse agricultural industry in the United States? This is made possible by the nearly 10 million acres of farmland and over 50,000 farms that our state is made up of. It also ranks number three in the nation for the amount of farmers markets – giving people all around Michigan the opportunity to buy locally-grown, fresh produce!
The following are just a couple of examples of Michigan foods that are harvested in the late summer and early fall: apples, broccoli, cabbage, pumpkins, squash, sweet corn, sweet potatoes, and carrots. Don’t worry, there are plenty of seasonal recipes that these foods can be incorporated into. One of our favorites is called Zoodles, also known as zucchini noodles! By using fresh zucchini and even squash, zoodles puts a healthy spin on the traditional pasta dinner.
To make zoodles, follow these easy steps below:
- Slice up your zucchinis and squash with a spiralizer, or just cut them into small strips with a vegetable peeler or knife.
- Quickly cook them in a frying pan for a few minutes, or cover them & stick them in the microwave for 2-3 minutes.
- Add some tomato sauce, parmesan cheese, or maybe mix in some other veggies like corn, and you’ve got yourself a nutritious and delicious seasonal meal!
