Tis The Season For Squash!

Squash has many different kinds and many different preparations! All delicious, healthy and perfect for the fall season.

Butternut squash

Butternut squash is a variety of winter squash that is particularly delicious this time of year. It is great to use for roasting or in soups, risottos, and curries. Butternut squash is high in Vitamin A, Vitamin E, and potassium.

Acorn Squash

Acorn squash, also called pepper squash, is another winter squash that is ideal around this time of year. It is excellent for roasting but also often used as part of stuffing or as a vessel to be stuffed with other delicious fall foods. Acorn Squash is high in Vitamin C, Vitamin A, and magnesium.

Delicata Squash

Delicata squash is a winter squash also known as peanut squash. This squash is creamy and sweet and is often used in salads and soups. It is high in Vitamin A, Vitamin C, and Folate.

Spaghetti Squash

Spaghetti Squash is a unique squash most commonly available in fall and winter. It gets its name because once roasted, the flesh pulls apart easily into strands that look like spaghetti. Because of this, it is commonly used in pasta or noodle dishes or served cold as part of a salad. This squash is high in Vitamin B6 and potassium.

Zucchini

This squash has green skin and flesh and is considered a summer squash. It gives a refreshing crisp bite to any dish and is often eaten in salads or baked. The flowers from the zucchini plant are also edible and often served stuffed during the summer. Zucchini is high in Vitamin C and Vitamin B6.

Pumpkin

YES, a pumpkin is technically a squash! A fall staple that can be made into all sorts of sweet treats, and savory dishes. The skin is not generally considered edible but the flesh is creamy and delicious and the seeds can be roasted for a great snack. Pumpkin is especially high in Vitamin A and fiber.
