Chicken and brussel sprouts

This delicious chicken paired with brussel sprouts, chickpeas, and grapes can all be prepared on one pan making prep and cleanup as easy as possible

Ingredients

  • 2 chicken breasts
  • ½ lb brussel sprouts (about 15-20 sprouts)
  • 1 cup grapes (or just a bunch)
  • ½ can of chickpeas
  • olive oil
  • chilli powder
  • cumin
  • garlic powder
  • salt
  • pepper

PREPARATION

  1. Since the chicken from the Cupboard is frozen, be sure to take your chicken out of the freezer the day before to let it dethaw

  2. Preheat your oven to 400°F

  3. Place the chicken breasts on a baking sheet with cooking spray

  4. Seasoning time! Today I am using chilli powder, cumin, salt, and pepper but feel free to experiment as we have a variety of spices available at the Cupboard. I personally like to use garlic salt if I have it available. Make sure to rub in your spices and apply to both sides for maximum flavor

  5. Put the chicken in the oven for 10 minutes then remove and set to the side

  6. While your chicken is baking, take your brussel sprouts and cut them in half

  7. Take your chickpeas from the can and rinse them well to remove excess sodium

  8. Combine brussel sprouts, chickpeas, and grapes into a large bowl w/ 5 tsp of olive oil. Add salt, pepper, and garlic powder generously (once again experimentation is encouraged!) and mix it all together until the oil and spices are spread evenly

  9. On the same pan as your chicken, spread your mix in an even layer

  10. Cook for 30 minutes or until chicken is no longer pink on the inside and your brussel sprouts are nice and crispy. Shuffle your ingredients around and flip your chicken halfway through for best results
